Lentil salad with soy and ginger marinade


Ingredients (2 portions):

150 g green lentils
salt
1 small onion
1 small carrot
2 tsp. peanut oil
30 ml soy sauce
1 tsp. chopped ginger
1 tsp. HUXOL Sucralose Liquid Sweetener
1 tsp. lemon juice

Preparation:

  1. Cook the lentils in 450ml boiling water for 20 to 25 minutes until they are firm to the bite. Peel and finely dice the onion, peel wash and finely dice the carrot. Sweat the onion in 1 tsp. oil, add the carrot and sweat them together for another 1 to 2 minutes. 
  2. Strain the lentils and mix them with the carrot and onion. Mix the remaining oil with the soy sauce, ginger, HUXOL Sucralose and lemon juice and add this to the lentil mixture. Mix carefully together and allow to cool before serving. n

Ready in around 35 to 40 minutes
of which 15 minutes preparation time.
