Apple, carrot and celeriac spread

Ingredients (1 portion):

1 small carrot
1/8 celeriac
1 unpeeled apple
sea salt, freshly ground pepper
2 tsp. lemon juice
1 egg yolk
1/4 tsp. mustard
80 g yoghurt (1.5% fat)
4 tsp. HUXOL Stevia Sweetener Powder


  1. Wash and peel the carrot and the celeriac. Quarter and core the apple and grate it coarsely with the carrot and celeriac. Season lightly with salt, pepper and 1 tsp. lemon juice and leave to drain in a sieve.
  2. Mix the egg yolk with the remaining lemon juice and the mustard and beat to a creamy consistency in a bowl over a pot of boiling water. Stir in the yoghurt and season with the HUXOL Stevia and salt. Lightly squeeze out the vegetable and apple mixture, add the yoghurt mixture and mix. Chill before serving.

Ready in around 30 minutes
Of which 30 minutes preparation time.

Tip: the spread keeps for around 3 days in a fridge and is sufficiant for 4 to 5 slices of bread
